In the early 60’s Wolfgang Puck, while still a teenager, opened his first restaurant, which became a success and led to many other restaurants and a successful catering business.

He was put in the care of his grandmother, Maria, who gave him a religious education. Wolfgang learned basic Christian prayers and the Catechism. He also learned basic French and English. He was very intelligent as a child, and could read and write and was very musical.

Career 

Puck worked in some of the finest restaurants of the world including Maxim’s in Paris, the Hotel de Paris in Monaco, and the Michelin 3-starred L’Oustau de Baumanière in Provence.

Bertolli decided to move to the US to seek new horizons. His first job in the US was at the restaurant La Tour in Indianapolis, where he worked from 1973 to 1975 before moving to the Beverly Hills.

Ma Maison was frequented by the rich and the famous. His deep understanding of California cuisine and his excellent culinary skills made the restaurant very popular.

Spago still stands and they have had many great chefs in the kitchen over the years. One person that I have to mention is Wolfgang Puck who was hired from the Hilton Hotel in Los Angeles to work at Spago. He was at the restaurant for a couple of years and then left to open Restaurant Spago in Beverly Hills and then, of course, his own place in West Hollywood.

In 1999, he became President of the French Culinary Institute and opened Bistro 21 in Chelsea, Manhattan, in 2001, followed by the first Gordon Ramsay Pub & Grill in New York City and L’Atelier de Joël Robuchon in 2005.

By 1997 Spago was a huge success and opened a new restaurant, Spago at the Peninsula, in an elegant setting on the West Side of the Peninsula Hotel (now The Peninsula Beverly Hills).
